Nagano Prefecture, which is landlocked and has many basins, has cool summer mornings and evenings and a large temperature difference between day and night, allowing starch, which determines the flavor of rice, to accumulate efficiently through photosynthesis.
Nagano has many river sources, including the Chikuma River (Shinano River), the Kiso River, and the Tenryu River. The clear streams flowing from the mountains are mainly used for irrigation water for rice cultivation.
It has excellent characteristics such as stickiness, elasticity, luster, and aroma, and is delicious even when it’s cold.
